    Cocktail & Mocktail

    Sparkling Cider

    INGREDIENTS

    Cocktail

    • Apple Cider
    • Prosecco or other sparkling champagne
    • 1 Granny Smith apple

    Mocktail

     

    • Apple Cider
    • Sparkling Water
    • 1 Granny Smith apple

     

    DIRECTIONS

     

    COCKTAIL

    Pour apple cider in champagne flute or glass until halfway full. Fill the rest of the glass with champagne. Top with diced apples for an extra tarty flavor.

     

    MOCKTAIL

    Pour apple cider in champagne flute or glass until halfway full. Fill the rest of the glass with sparkling water. Top with diced apples for an extra tarty flavor.

    APPETIZER

    Baked Brie with Apples and Pancetta

    INGREDIENTS

    • 8 oz package of brie
    • 5 oz of pancetta, diced into small pieces
    • 1 cup of peeled and diced sweet apple (I used Gala, but other sweet versions will work as well. I’d also recommend Granny Smith)
    • 1/3 cup of roughly chopped pecans
    • French baguette, thinly sliced

    DIRECTIONS

     

    Preheat the oven to 375 degrees.

     

    When the oven is set, place brie (with rind on – the rind will keep the cheese contained) on a baking dish with edges, and cook for 12-15 minutes until gooey on the inside. To check the consistency, stick a knife in the brie.

     

    While the cheese is cooking, place diced pancetta in a medium frying pan and cook over medium-high heat until crispy (about 6-8 minutes). Lower the heat and add the diced apples, stirring to combine and cooking another minute or two. Set aside.

     

    Once the Brie is melted, top with pancetta and apple mixture and chopped pecans. Place everything back in oven for another two minutes. When it’s done, take it out of the oven and serve immediately with sliced bread.

    MAIN COURSE

    Autumn Chicken Chili

    INGREDIENTS

    • 3 tablespoons of olive oil
    • A quarter of a sweet onion, chopped
    • 2 cloves of garlic, chopped or minced
    • 2 jalapenos, seeds removed and chopped
    • 2 pounds of chicken, cut into bite-sized cubes
    • 2 tablespoons of cumin
    • 2 tablespoons of paprika
    • 1 teaspoon of chili powder
    • 1 teaspoon of dried oregano
    • 1 teaspoon of salt
    • 1/2 teaspoon of ground pepper
    • 1 can of diced tomatoes
    • 1 can of kidney beans
    • 1 can of pinto beans
    • 1 bottle of seasonal beer, or any type of beer you prefer
    • 1/2 cup of chicken broth
    • 1/4 to a 1/3 cup of masa harina
    • Shredded Monterrey jack or pepper jack cheese
    • Sour Cream
    • Avacado

    DIRECTIONS

     

     

    Heat a dutch oven or large pot over medium-high heat. Add olive oil, onions, garlic and jalapenos to the pot and let everything cook until softened, about 6-7 minutes. Add the chicken and season with cumin, paprika, chili powder, dried oregano, salt and pepper. Stirring and cooking until the chicken is browned and vegetables are tender.

     

    Add the diced tomatoes and their liquids, beans, about 3/4 of the bottle of beer (set the rest aside, you’ll use it with the masa harina) and chicken broth, stirring to combine all of the ingredients. Bring the pot to a boil and then reduce the heat to a simmer. Cover the pot and cook for about 50-60 minutes.

     

    After the chili is just about done cooking, in a separate bowl, combine the remaining beer and masa harina to create a flour slurry. Add the slurry to the bowl and cook for an additional five minutes.

     

    Serve in bowls and top with cheese, sour cream and avocado.

    ENHANCED DESERT

    Date Night In: Dark Chocolate & Caramel apple Bites

    INGREDIENTS

    • 5oz of dark chocolate
    • Bag of Seneca apple chips (included in your box)
    • 1/2 cup of caramel squares (included in your box)
    • Fudge drizzle (included in your box)
    • Sprinkles (included in your box)

    In a medium microwave-safe bowl, melt the chocolate for 30 seconds at a time, stirring thoroughly in between each interval. When the chocolate is melted, place tablespoon portions on your Fall in Love fondue mat and create flat circles with the chocolate. Immediately after, place an apple chip or two on each chocolate round, making sure they overlap.

     

    Next, place caramel squares in your fondue pot and stir the caramel until melted. Please be sure not to overcook the caramel (you’ll know you overcooked it if it’s very bubbly and a thicker consistency). Once melted, top each round with a drizzle of melted caramel, fudge and sprinkles. Let the apple bites cool and harden before eating. Depending on the type of chocolate you buy, you may want to stick them in the fridge to harden a bit.
