  • Walk the Plank French Toast Sticks with Liquid Gold

    INGREDIENTS
    • 3/4 cup of half and half
    • 2 eggs
    • 1/4 cup of brown sugar
    • A couple pinches of salt
    • 4 slices of thick sliced bread (white or whole wheat)
    • 3 tablespoons of butter, divided
    • Cinnamon
    • 1/4-1/2 cup of maple syrup

    DIRECTIONS

     

    Preheat the oven to 375 degrees.

     

    In a medium bowl, whisk half and half, eggs, brown sugar and salt in a bowl. Place one tablespoon of butter in a large frying pan over medium heat.

     

    While the pan heats, start soaking the bread. Dip each slice of bread into the mixture and let it soak for 30 seconds on each side. When the butter starts to sizzle in the pan, place the bread in the pan and let it cook on each side for about three to five minutes, or until browned. Sprinkle each side with a couple of pinches of cinnamon. Repeat with the remaining slices of bread, adding more butter to the pan if needed.

     

    Place all of the slices on a nonstick baking sheet and bake in the oven for five minutes. Remove from the oven and using a serrated knife, cut the bread into thick sticks.

     

    To make the “liquid gold”, place maple syrup and a tablespoon of butter in a bowl and it heat it in the microwave for about 30 seconds or until the butter is melted.

  • Cannonball Cake Bites

    INGREDIENTS

    • 1 box of yellow cake mix (plus the ingredients listed on the box)
    • 8 oz of cream cheese, softened
    • 11.5 – 14 oz milk or semi-sweet baking chocolate
    • Parchment paper

    DIRECTIONS

     

    Make the cake according to the directions on the box. When ready, remove the cake from the oven and set aside to cool.

     

    When the cake is cooled completely, remove half of the cake (recommend removing the edges as well because they get crispy) and crumble it in a bowl. Add the cream cheese and using a hand mixer, mix until the cake and cream cheese mixture is smooth and creamy.

     

    In heaping tablespoon portions, roll mixture into balls (should make 14 bites). Place the bites in the freezer for 15 minutes to harden.

     

    Before taking the bites out of the freezer, melt the chocolate in a microwave safe bowl in 30 second increments until the chocolate is fully melted. Place a sheet of parchment paper on a hard surface.

     

    Take the bites out of the freezer and using a fork and a spoon, cover each bite completely with chocolate. Place them on the parchment paper to harden. After about 30 minutes, they should be ready to enjoy.
