A NOTE FROM MARINA...
Manners are pretty important around the table and I’ve put together some delightful eats for you to enjoy after you set the table, fold your napkins and take a seat! This menu includes homemade chicken salad and pimento cheese tea sandwiches, as well as a sweet fruit salad. Happy eating!

Starter
Sweet Honey-Lime Fruit Salad
Prep time: 5-10 minutes
Total time: 5-10 minutes
INGREDIENTS
4 cups of your favorite fruit, sliced (I used strawberries, blueberries, pineapple, grapes)
Zest and juice of one lime
2 teaspoons of honey
DIRECTIONS
In a small bowl, combine lime zest, juice and honey. Stir to combine and set aside. Slice all of your fruit using a cutting board and knife. Try your best to cut carefully!
To assemble the salad, place fruit in a medium bowl and top with lime and honey mixture. Mix with a spoon and share with everyone at the table.
Entree
Tea Sandwiches
Prep time: 15-20 minutes
Total time: 15-20 minutes
INGREDIENTS
Chicken Salad (makes about 4-5 cups)
2 cups of shredded rotisserie (or cooked) chicken
2/3 cups of seedless, red grapes, sliced in half
1/4 cup of mayonnaise
1/4 cup of Greek yogurt
1/4 cup of chopped walnuts
2 tablespoons of diced celery
Salt
Pepper
White or multi-grain sliced bread (2-3 slices per person, depending on how much bread you use) (GF option: GF bread)
Pimento Cheese (makes about 2-3 cups)
1 cup of shredded white or orange cheddar cheese
1 tablespoon of mayonnaise
1/4 cup of whipped cream cheese
4 oz of diced pimentos
1/2 teaspoon of paprika
Salt
Pepper
White or multi-grain sliced bread (2-3 slices per person, depending on how much bread you use) (GF option: GF bread)
DIRECTIONS
To make the chicken salad, combine the chicken, grapes, mayonnaise, Greek yogurt, walnuts, celery and a couple pinches of salt and pepper. Stir to combine, adding more salt and pepper if needed.
To make the pimento cheese, combine the cheddar cheese, mayonnaise, cream cheese, pimentos, paprika and a couple pinches of salt and pepper. Stir to combine, adding more salt and pepper if needed.
To make fun shaped sandwiches, use cookie cutters or knife to shape the bread. To assemble the sandwiches, add chicken salad and/or pimento cheese to the bread and enjoy. These can get messy, so be sure to have your napkins on your lap!
